Wildflower Honey BBQ Ribs

 

These smoked short ribs are a tender, melt-in-your-mouth delight, packed with smoky flavor and enhanced by a rich, sweet, and tangy Wildflower Honey BBQ Sauce. The slow-cooked process at a low temperature ensures that the meat becomes incredibly tender, with the perfect balance of crispy exterior and juicy, flavorful interior. The BBQ sauce, with its complex blend of honey, molasses, chipotle, and spices, complements the deep smoky notes from the hickory wood chips. Whether served as the star of a family dinner or at a weekend barbecue, these ribs are sure to impress with their bold flavors and satisfying texture.

Ingredients

  • 4 lbs Griffin Farms Short Ribs
  • 1/2 c Salt & Pepper Blend
  • 1 c Hickory Wood Chips
  • 1 c Ketchup
  • 1/4 c Wildflower Honey
  • 1/4 c Brown Sugar
  • 1 Tbs Worcestershire Sauce
  • 1/4 c Apple Cider Vinegar
  • 1/4 c Water
  • 1 tsp Salt & Pepper Blend
  • 2 tsp Dry Mustard
  • 1 tsp Garlic Powder
  • 2 tsp Onion Powder
  • 2 Tbs Molasses
  • 2 tsp Paprika
  • 1 tsp Chili Powder
  • 1 Tbs Chipotle in Adobo Purée
  • 1/4 tsp Allspice
  • 1/8 tsp Cloves
  • 1 Tbs Liquid Smoke

Combine Ingredients for Wildflower Honey BBQ Sauce​

In a heavy-bottomed pot, add the following ingredients…

  • 1 cup Ketchup
  • 1/4 cup Wildflower Honey
  • 1/4 cup Brown Sugar
  • 1 tablespoon Worcestershire Sauce
  • 1/4 cup Apple Cider Vinegar
  • 1/4 cup Water
  • 1 teaspoon Salt & Pepper Blend
  • 2 teaspoons Dry Mustard
  • 1 teaspoon Garlic Powder
  • 2 teaspoons Onion Powder
  • 2 tablespoons Molasses
  • 2 teaspoons Paprika
  • 1 teaspoon Chili Powder
  • 1 tablespoon Chipotle in Adobo Purée
  • 1/4 teaspoon Allspice
  • 1/8 teaspoon Cloves
  • 1 tablespoon Liquid Smoke

Simmer The Sauce

Place the pot over medium-high heat and bring the mixture to a simmer.

Once it reaches a simmer, lower the heat and let it cook for 10 minutes over low heat.

Let Cool

After 10 minutes, remove the pot from heat.

Let the sauce cool to room temperature.

The sauce can be stored in an airtight container for later use or served immediately with the short ribs.

Smoked Short Ribs Instructions:

Soak Wood Chips

Soak 1 cup of hickory wood chips in water for 30 minutes.

Prepare Grill

Preheat your gas or charcoal grill to a steady temperature of 250°F.

If using charcoal, set up the grill for indirect cooking.

Prepare Smoking Box:

 Place the soaked wood chips in a smoking box or wrap them in heavy-duty tin foil with several holes punched through it.
Place the smoking box or tin foil directly over the coals (or heat source) to start creating smoke.

Season the Ribs

Season the 4 lbs. of Griffin Farms short ribs generously with 1/2 cup Salt & Pepper Blend.

Grill the Ribs

Place the ribs fat side up on the grill.
Close the lid and maintain a temperature of 250°F.

Cook the ribs for 2 hours without opening the grill lid.

Mop with Wildflower Honey BBQ Sauce

After 2 hours, use a brush to mop the ribs with the prepared Wildflower Honey BBQ Sauce.
Close the lid again and continue to cook for an additional 1–2 hours, or until the internal temperature of the ribs reaches 190°F.

Rest the Ribs

Once the ribs have reached 190°F, remove them from the grill.
Wrap the ribs in foil and let them rest for 20–30 minutes to allow the juices to redistribute.

Slice and Serve

After resting, slice the ribs and serve them with the Wildflower Honey BBQ Sauce on the side.
