- 1 Red Onion (cut into 1-inch cubes)
- 1 Zucchini (cut into 1-inch cubes)
- 1/3 cup Olive Oil
- 2 tbsp Worcestershire Sauce
- 1/3 cup Soy Sauce
- 1 tbsp Lemon Juice
- 1 tsp Lemon Zest
- 1 tbsp Fresh Rosemary (finely minced)
- 1 tbsp Dijon Mustard
- 1 tbsp Garlic (minced)
- 1 tsp Wildflower Honey
- 2 tsp Ground Black Pepper
For the Harissa Dipping Sauce:
- 1/4 cup Harissa Sauce
- 1 tsp Garlic Paste
- 1 tsp Lemon Juice
- 1/2 cup Mayonnaise
- 1/8 tsp Salt & Pepper Blend
Instructions:
-
Prepare the Grill:
Preheat the grill to medium-high heat. Clean and lightly oil the grill grate. -
Make the Marinade:
In a bowl, combine olive oil, Worcestershire sauce, soy sauce, lemon juice, lemon zest, rosemary, Dijon mustard, garlic, wildflower honey, and ground black pepper. Mix well. -
Marinate the Sirloin and Vegetables:
- Place 3/4 of the marinade in a zip-lock bag with the cubed sirloin. Seal the bag, removing as much air as possible, and refrigerate. Let the beef marinate for 1–3 hours.
- In a separate zip-lock bag, place the remaining marinade with the mushrooms and refrigerate to marinate alongside the beef.
-
Prepare the Skewers:
Thread the marinated sirloin cubes, zucchini, mushrooms, and red onion onto skewers, alternating between the beef and vegetables. -
Grill the Skewers:
Once the grill is preheated, place the skewers on the grill. Grill until the beef is nicely seared and the internal temperature reaches 120–125°F for medium-rare steak. This should take around 8–10 minutes, turning occasionally to ensure even cooking. -
Make the Harissa Dipping Sauce:
In a bowl, combine the harissa sauce, garlic paste, lemon juice, mayonnaise, and salt & pepper blend. Stir until smooth. -
Serve:
Remove the skewers from the grill and serve immediately with the harissa dipping sauce on the side.
