Beef retail cut values have been skyrocketing over the past several years. Current average market prices for beef are almost $7.50 per pound. Now you have the option to get superior beef cuts your way while saving some money by buying direct from the farm and knowing where and how your beef was raised. Grass fed, grain finished with no added hormones.
Hanging Weight: This is the weight of the animal after it’s slaughtered but before it’s butchered. It includes bones, fat, and organs.
Yield Weight: This is the actual edible meat that you can take home after the animal is processed. The yield is usually a percentage of the hanging weight.
When purchasing a whole cow, the yield is the amount of usable meat you’ll take home after the animal is processed. This includes everything from steaks and roasts to ground beef. However, the yield is not fixed and can be influenced by two main factors: custom cuts and which parts of the animal are kept.
Not all parts of the animal are traditionally considered “premium” cuts of meat, but they are still edible and valuable. When buyers choose not to take all edible parts of the animal (organ meats, bones, suet, ect.), it reduces the yield weight since these parts would have contributed to the overall amount of usable meat.
When you request custom cuts, such as only having premium steaks or roasts and leaving out other cuts like stew meat, ground beef, or organ meats, you might end up with less total usable meat. For example, if you only want steaks and roasts, the butcher may trim away fat and bones, reducing the overall weight of the final cuts of meat.
